Cherry Pie Filling

Ingredients:
- 4 cups fresh or frozen tart cherries, pitted
- 1 to 1 1/2 cups granulated sugar
- 1/4 cup cornstarch or flour
- a splash almond extract, optional
Directions:
Heat the cherries over medium-low heat in a saucepan and cover.
Cherries will lose considerable juice after a few minutes, so remove from heat quickly.
Mix together sugar and cornstarch in small bowl; pour over hot cherries, blend well. Mix in almond extract.
Cook over low heat until thickened, stirring frequently.
Remove from heat; let cool.
