Apple Pudding

Ingredients:

Cake:

  • 2 cups brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 5 peeled and sliced apples
  • 2 tsp vanilla
  • 2 cups flour (gluten free or all purpose)
  • 2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 cup cranberries, dried or any raisins
  • 1/2 cup pecans, chopped, optional

PUDDING:

  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1/2 cup butter
  • 1/2 cup whole or evaporated milk

Directions:
CAKE:
Preheat oven to 350 degrees F.
Beat sugar, butter, eggs and vanilla until creamy. Dump in apples but DO NOT STIR YET!

Sift flour, soda, and spices together over top of apples. Add dried cranberries and pecans. Stir all until blended; it will be thick. Pour into an un-greased 9×13 baking dish. Bake about 45 minutes or until cake pulls away slightly from the edge of pan.

PUDDING:
Mix all together and bring to a boil for 2 minutes and no more, stirring constantly. Poke holes in cake with skinny steak knife and pour hot pudding over hot cake. Serve warm or cold.

Serving Information:
May top with whipped cream or ice cream or not, it is wonderful all by itself.
