Apricot Marmalade

Preparation Time: 1 hr
Wash fruit and soak overnight in 4 cups water. In the same water, place over heat and simmer until very soft. Push through a coarse sieve and return to heat.
Bring to a boil and then add sugar, orange peel and almonds. Simmer gently 40 to 45 minutes stirring constantly to prevent scorching.
Pour into hot sterile jars, wipe rim and seal with hot sterile lids and rings. Process in full boil water bath 10 minutes.

· 2 cups, packed tightly, dried apricots
· 4 cups water
· 1 Tablespoon grated orange peel
· 2 cups sugar
· chopped almonds, optional

Variations: 1 Tablespoon raisins and 1/2 teaspoon ground cinnamon instead of orange peel and almonds. Or replace 1 cup dried apricots with 1 cups dried prunes.
