· For Syrup:
· 1 pint blueberries, rinsed, stems removed
· 1 cup sugar
· ¼ cup water
· In saucepan, cook all over medium heat, stirring until sugar dissolves. Crush berries slightly, until mixture gets syrupy, about 10 to 12 minutes. Serve warm or cool.
· For Topping:
· 1/4 cup sugar
· 1 box dry pectin
· 1 cup water per 1 pint blueberries
· For Low Sugar Ice Cream topping recipe : in blender or food processor mix ½ cup sugar, 1 box dry pectin, 1 cup water per 1 pint blueberries. Empty into a saucepan, slowly bring mixture to a boil for 1 minute, reduce heat and simmer for 15 minutes, topping will thicken as it cools
